Thrifty and Chic Mom is having a What’s for Dinner recipe swap today. How fun and as I sit here smelling the awesome lentil stew that is simmering for our dinner tonight, I figured that would be the best recipe to share today.

1 cup dry lentils
1 cup onions, chopped
1 small garlic clove, minced
1 TB. olive oil
4 cups beef or vegetable broth
1 large can diced tomatoes, undrained
1 TB. worcestershire sauce
1/4 tsp. dried oregano
1/4 tsp. black pepper
1 bay leaf
1/2 cup fresh carrots, chopped
1/2 cup celery, chopped
(optional) 1/2 lb. sausage (roll) (crumbled, cooked, drained)

1. Rinse lentils, set aside.
2. In a large saucepan cook onion in hot oil with garlic until tender.
3. Stir in lentils, broth, tomatoes and spices. Bring to boiling and reduce heat.
4. Cover and simmer for 15 minutes.
5. Add carrots and celery. Cover and simmer for 20 minutes or until veggies are tender.
6. If desired, add sausage and heat through.
7. Remove bay leaf before serving.

We will be enjoying this with homemade cornbread tonight. What’s for dinner at your house?
